Storing Vegetables

Do not wash vegetables before storing them unless you carefully remove excess moisture. Washing them imparts too much moisture which can quickly causes wilting, but if you dry the vegetables, you remove too much moisture and they dry out. We recommend that you wait until you are ready to eat to wash. Store leafy vegetables such as lettuce and cabbage in sealed plastic bags in the crisper. The bags prevent moisture loss and the cold keeps leaves from wilting. Leafy veggies will last 10 days when stored well. Vegetables such as cauliflower, Broccoli, Beans and Peppers also do well stored this way. Store root vegetables such as carrots or turnips in plastic bags with holes cut for ventilation. Be sure to remove the tops. The leaves will absorb moisture from the part you plan on eating.
